What is Ashura?
Ashura is a special dessert symbolizing unity, abundance and sharing in Turkish cuisine. Historically rumored to have been made by the Prophet Noah with the last ingredients left on his ark, Ashura is made with different ingredients in every home. Tricks of Making Ashura
- Preparing the wheat in advance: Soaking and boiling the wheat, which is the main ingredient of Ashura, the night before is of great importance in terms of consistency. In this way, the wheat softens well and the consistency of the soup becomes better.
- Sugar Balance: You can shape the taste of the soup according to your personal preference. It is possible to adjust the amount of sugar according to your taste. Those who do not like too sweet can reduce the sugar a little.
- Frequent Stirring: Do not forget to stir frequently during cooking so that the mixture does not stick to the bottom and the consistency is smooth.
Ingredients (for 6-8 people):
- 1 water glass of wheat
- 1/2 cup chickpeas (boiled)
- 1/2 cup dried beans (boiled)
- 1/2 cup rice
- 10-12 Orgibite Yellow Dried Apricots (chopped)
- 1/2 cup Orgibite Raisins
- 1/2 cup Orgibite Walnuts (chopped)
- 1/2 cup Orgibite Hazelnut
- 1/2 cup Orgibite Almonds
- 1 glass of milk
- 1.5 cups granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon cloves (boiled and drained)
Preparation:
- Boil the wheat: Soak the wheat the night before. The next day, drain it, put it in a pot, add 5-6 cups of water and boil it until it softens. Do not pour the water in which the wheat was boiled; this water will increase the flavor and consistency of the soup.
- Boil Chickpeas and Beans: Boil the chickpeas and beans soaked the night before in separate pots. Add the boiled chickpeas and beans to the wheat.
- Add Rice: Add the rice to the boiled wheat and legumes, add a little more water and cook until the rice is very soft.
- Add Dried Fruits: Add Orgibite Yellow Dried Apricots and Orgibite Dried Raisins to the soup. When the dried fruits absorb the water and soften, they add a pleasant flavor to the dessert.
- Sugar and Milk: When the soup starts to thicken, add 1 cup milk and 1.5 cups sugar. Continue to cook your ashura by stirring until the sugar dissolves.
- Cloves and Cinnamon: Add 1 teaspoon of boiled and strained cloves and 1 teaspoon of cinnamon to your soup. These flavors will give a pleasant taste to the soup.
- Add Dried Nuts: Add chopped Orgibite Walnuts, Orgibite Hazelnuts and Orgibite Almonds while your soup continues to cook. These nuts will add both crunch and flavor to the dessert.
- Consistency of the soup: Your soup should have a slightly runny consistency. Check the consistency of the soup; if it is thick, you can add hot water.
- Garnish: After dividing your asura into bowls, you can optionally serve it by decorating it with pomegranate seeds, hazelnuts, walnuts, cinnamon or nutmeg.
