Almond Energy Bars Recipe
Ingredients:
- 1 cup almonds (optionally raw or roasted)
- 1 cup oatmeal
- 1/2 cup dried fruit (raisins, dried apricots or dates)
- 1/4 cup honey or maple syrup
- 1/4 cup hazelnut paste (or almond paste)
- 1/2 teaspoon vanilla extract (optional)
- 1/4 teaspoon salt
- 1/4 cup grated coconut (optional)
Preparation:
- Prepare the Hazelnuts: Chop the almonds and other dried fruits into fine pieces in a food processor. If you are using whole almonds, you can cut them into small pieces.
- Prepare the Mixture: In a large mixing bowl, combine the oatmeal, almonds, dried fruits, salt and shredded coconut.
- Add Liquid Ingredients: In a small bowl, combine the honey or maple syrup, nut butter and vanilla extract. Pour this mixture over the dry ingredients and mix well.
- Form the Bars: Pour the mixture onto a baking sheet lined with greaseproof paper and spread it evenly. Press the mixture well to compact it.
- Bake: Bake in a preheated 180°C (350°F) oven for 15-20 minutes. Allow to cool after removing from the oven.
- Slice: Once cooled, slice the mixture and your energy bars are ready.
Serve:
You can consume your almond energy bars as a snack or as a post-workout snack. It keeps its freshness when you store it in the refrigerator. Enjoy your meal!
