Organic Beet Pasta with Walnuts and Yogurt
Ingredients:
- 200 g Orgibite Organic Beet Pasta
- 1 large beet (boiled or baked)
- 2 cloves of garlic
- 3 tablespoons yogurt (cashew yogurt for vegan alternative)
- 2 tablespoons olive oil
- Juice of half a lemon
- 1 teaspoon salt
- 1 teaspoon black pepper
- For the top
- 2 tablespoons of coarsely pounded walnuts
- 1 teaspoon chili pepper (optional)
- Fresh dill or basil leaves
Preparation:
- Boil water in a large pot, add a little salt and boil Orgibite Organic Beet Pastafor the time indicated on the package. Then drain.
- Cut the boiled or baked beetroot into small pieces and put them in a blender. Add yogurt, garlic, olive oil, lemon juice, salt and pepper and blend until you get a smooth sauce.
- Combine the boiled pasta with the sauce and mix well.
- When serving, sprinkle crushed walnuts, red pepper flakes and fresh dill on top.
