Organic Chickpea Flour Pasta Recipe with Vegetables
Ingredients:
- 200 g Organic Chickpea Flour Pasta
- 1 red capia pepper
- 1 zucchini
- 1 handful of fresh spinach
- 1 clove of garlic
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon lemon juice
- For the topping: Grated parmesan or vegan cheese
Preparation:
- Bring a large pot of water to the boil. Add a little salt to the water and boil the pasta according to the instructions on the package (usually 7-9 minutes).
- Drain the pasta and toss with a little olive oil to prevent sticking.
- Heat the olive oil in a skillet and lightly fry the chopped garlic.
- Add the thinly sliced capia pepper and zucchini, sauté until the vegetables soften.
- Add the spinach and cook for 1-2 minutes while stirring.
- Add the boiled pasta to the vegetables. Add salt, pepper and lemon juice.
- Cook the mixture in the pan for 1-2 more minutes and transfer to serving plates.
Serve hot with grated parmesan or any cheese of your choice.
