Organic Chickpea Flour Pasta

Organic Chickpea Flour Pasta Recipe with Vegetables

Ingredients:

  • 200 g Organic Chickpea Flour Pasta
  • 1 red capia pepper
  • 1 zucchini
  • 1 handful of fresh spinach
  • 1 clove of garlic
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon lemon juice
  • For the topping: Grated parmesan or vegan cheese


Preparation:

  1. Bring a large pot of water to the boil. Add a little salt to the water and boil the pasta according to the instructions on the package (usually 7-9 minutes).
  2. Drain the pasta and toss with a little olive oil to prevent sticking.
  3. Heat the olive oil in a skillet and lightly fry the chopped garlic.
  4. Add the thinly sliced capia pepper and zucchini, sauté until the vegetables soften.
  5. Add the spinach and cook for 1-2 minutes while stirring.
  6. Add the boiled pasta to the vegetables. Add salt, pepper and lemon juice.
  7. Cook the mixture in the pan for 1-2 more minutes and transfer to serving plates.


Serve hot with grated parmesan or any cheese of your choice.
