Chickpea Wrap Recipe
Ingredients
- 2 cups boiled chickpeas
- 1 onion (finely chopped)
- 2 cloves of garlic (crushed)
- 1 tomato (diced)
- 1 teaspoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup olive oil
- 1 teaspoon chili pepper (optional)
- Juice of half a lemon
- 4 pieces of lavash or tortilla bread
- Fresh greens (lettuce, arugula, parsley, etc.)
- Optional sauce (yogurt, tahini sauce or hot sauce)
Preparation:
- Prepare the Chickpeas: Heat the boiled chickpeas in olive oil in a pan. Add chopped onion and garlic and saute until the onions turn pink.
- Add the ingredients: Add the diced tomatoes, tomato paste, cumin, salt, black pepper and red pepper flakes. Stir and cook for 5-7 minutes. Finally, add the lemon juice and stir.
- Prepare the Wrap: Place the chickpea mixture in the center of lavash or tortilla bread. Add fresh greens on top and add your optional sauce.
- Wrap the Wrap: Close the bread on both sides and wrap it tightly. Your burrito is ready!
- Serve: You can serve the chickpea wrap hot. It makes a great snack with fries or yogurt on the side.
