Red Lentil Meatballs Recipe

Ingredients

  • 1 cup red lentils
  • 1.5 cups of fine bulgur
  • 1 onion (finely chopped)
  • 4 tablespoons of oil
  • 1 tablespoon tomato paste
  • 1 tablespoon of pepper paste
  • 3 cups of water
  • 1 teaspoon cumin
  • Half a bunch of spring onions (finely chopped)
  • Half a bunch of parsley (finely chopped)
  • Salt, black pepper, red pepper flakes


Preparation:

  1. Cook the Lentils: Wash the lentils and put them in a pot with 3 cups of water. After the lentils soften and absorb the water, turn off the heat.
  2. Add Bulgur: Add the fine bulgur to the pot, mix and close the lid of the pot. Leave it to rest for 15 minutes for the bulgur to swell.
  3. Saute the Onion: Heat the oil in a separate pan, add the onion and saute until it turns pink. Then add tomato and pepper paste and saute for 2-3 minutes more.
  4. Combine the Ingredients: Add the tomato paste mixture to the pot with the lentils and bulgur. Add cumin, salt, black pepper and red pepper flakes. Mix all the ingredients well.
  5. Add Greens: Add finely chopped spring onions and parsley, knead the mixture.
  6. Shape: Pick walnut sized pieces from the mixture and shape them into meatballs with your hands.
  7. Serve: Serve with lettuce leaves and lemon wedges.
