Baked Chicken Rice Recipe
Ingredients
- 2 cups rice
- 4 cups chicken broth (or water)
- 500 grams chicken breast (diced)
- 1 onion (finely chopped)
- 2 cloves of garlic (crushed)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon chili pepper (optional)
- 1 teaspoon thyme
- Juice of 1 lemon
- Half a tea glass of pomegranate syrup (optional)
- Parsley or spring onion (for decoration, optional)
Preparation:
- Prepare the chicken: Preheat the oven to 180°C. Heat the olive oil in a pan and add the chopped onion. Saute until the onions turn pink. Then add the chicken pieces and saute until the chicken is cooked. Add garlic, salt, black pepper, red pepper flakes and oregano and stir.
- Prepare the Rice: After washing and draining the rice, boil it in a separate pot with 4 cups of chicken broth. After boiling, add the rice and cook over low heat until the water is absorbed (about 15 minutes).
- Baking: Place the cooked rice and sautéed chicken mixture in a large baking dish. Add the lemon juice and pomegranate molasses and mix well.
- Baking: Place the mixture in the preheated oven and cover with aluminum foil. Bake in the oven for 25-30 minutes. You can open the foil for the last 10 minutes to allow the top to brown.
- Serve: Garnish the dish with parsley or spring onions and serve hot. It harmonizes wonderfully with yogurt on the side.
